Of course, "most famous" is a relative thing. I had a huge list going, then had to trim it back for the required 7 entries.

George Takei, Sulu from Star Trek. Met him at a convention in Dallas. Very personable.
Jon Pertwee, the third Doctor Who. Met him when the Whomobile tour came through Dallas. He was quite the gentleman, pleased to meet everyone.
Drew Carey, host of Whose Line? and The Price is Right. Met him at Casino Rama after an Improv All-Stars show. I was impressed that he came out to meet fans after the show, and even more impressed that put off going to a press event until he had met everyone who wanted to meet him.
Micky Dolenz of The Monkees. I met him in Houston where he was performing in Aida with the Broadway touring company.
Tim Conway, comedian, co-star of The Carol Burnett Show. Met him and Tom Poston after their two-man show came through Dallas. My mom won tickets by making Tim laugh at a joke at a meet-and-greet earlier.
Roger Whittaker, singer. I've been to several of his concerts, thanks to my mom, who is a big fan. He always comes out to chat with fans after concerts.
Douglas Adams, writer of Hitch-Hiker's Guide to the Galaxy. Met him at a book signing in Dallas, and actually got to chat with him for a while.

and a bonus name: James Burke of Connections fame. He spoke at Richland College one year, and I got to meet him afterwards.

So many more names I could add: Paul Darrow, Michael Keating, Michael Dorn, Colin Baker, Sylvester McCoy, Sophie Aldred, Terry Nation, L. Sprague de Camp, Joe Straczynski, Ryan Stiles, Colin Mochrie, Brad Sherwood, Greg Proops, Tom Poston, Basia, Yanni, John Tesh, Paul Harvey, John Chancellor, Phil Gramm...

I tag you!

Say, this is a tough one and 30 years of autograph collecting doesn't make it any easier. Neil Armstrong, in 1989 at the US Space & Rocket Center celebration of the moon landing anniversary (shook his hand but no autograph, dang it). Jimmy Carter, at a book signing in Dallas. Cher, before a luncheon at Planet Hollywood for the craniofacial charity she has been involved with since making "Mask." Al Gore, back in 1988 when he was just a Senator from Tennessee making a failed bid for the Democratic nomination on a swing through the University of Alabama in Huntsville to see the new superconductor they had just developed. Wayne Gretzky, outside his hotel in Dallas when he was playing for the NY Rangers (he walked out then stood in the doorway of the bus as we filed by one at a time to exchange a few words and get an autograph). Terry Pratchett, at the 1997 Worldcon in San Antonio I was lucky enough to get in on one of his kaffeeklatsch sessions. Ted Turner, in 1987 when I was at Georgia Tech.

Too many more to list including Douglas Adams, Bobby Hull, Bill Cosby, Lewis Grizzard, Dave Barry, Jerry Seinfeld, Ted Koppel, Nolan Ryan, Reggie Jackson, T Boone Pickens, Pete Rose, six other moonwalkers, a dozen Playboy Playmates, most of the primary casts of the first four "Star Trek" series, about 100 "Star Wars" actors, countless Dallas Cowboys, and hundreds of NHL players. Oh, and CNN's Larry King.

Wow, you have met a lot of Whos.

I am trying to think who I might include besides the Whose Line people.

U. Utah Phillips -- a folk singer, he came to perform at a folk festival my step-mother was organizing.

Billie Collins: was Poet Laureate of the US a bit ago -- he was one of my teachers at grad school.

Representative John Hall -- US Congressman, ex-pop star, he came to the church I work at for a Martin Luther King celebration. I talk to the people in his office regularly.

Jamake Highwater -- (in)famous Native American(maybe) writer, my Native American student group brought him to Carleton to speak.

Sean Young -- actress, I went to high school with her, don't really remember her, but other people I know didn't like her.

Ok, that's all I can come up with. And yes, it's an odd group.
