Soup's on!

Had a great time at the Houston Browncoats cookoff today!

Since people asked, here is the recipe for Simon's 14-Bean Soup:

1½ cups mixed beans*
1½ tsp. salt

Rinse beans, add salt. Add water to cover.
Soak several hours or overnight. Drain.

Put beans in 3-qt. pot.

Add:

2 qt. water
1 large onion, chopped
1 clove garlic, chopped
1 ham bone
1 lb. ham pieces
1 can tomatoes
Juice of one lemon

Optional spices:

2 chicken bouillon cubes
1 tsp. garlic powder
2 Tsp. dried minced (or chopped) onion
1 bay leaf
1 tsp. chili powder
½ tsp. salt
½ tsp. pepper

Simmer 4 hours or longer Add salt and pepper to taste.
May be refrigerated covered. Flavor improves with age.

*The Bean Mix:

Equal amounts by volume of:
Black beans
Baby lima beans
Black-eyed peas
Garbanzo beans
Great Northern beans
Green split peas
Lentils
Navy beans
Pearl Barley
Pinto beans
Flower of May beans
Red kidney beans
Cranberry beans
Soy beans
